First, a bit of history about the Swedish goose supper...

 

St. Martin of Tours took the goose as his personal symbol while trying to avoid being ordained as bishop by hiding in a goose pen. Unfortunately, the geese did not keep him hidden very well with all of their squawking.

 

St. Martin’s Day, marked an important medieval autumn feast. Geese were ready for slaughter and the goose dinner tradition made its way from France through Germany to Sweden where it’s known and celebrated as Mårten Gås in Southern Sweden.

 

Enjoy black soup, roasted goose with all the fixings, and Skåne apple cake for the annual TSC Swedish goose supper.
